New Restaurants In the midst of L.A.'s preponderance of vegetarian-friendly and tofu-centric restaurants and a short way from trendy Melrose Avenue lies Animal: a fairly industrial-looking, minimalist locale with no sign. Arouse your inner carnivore with savory dishes such as the Foie Gras with Maple Sausage Gravy and a Biscuit, or for a slightly lighter fare, try the House Smoked Pork Belly with Lentil and Butterbean Salad. To finish off, prowl the dessert menu for the Bacon Chocolate Bars. Localvores and organic supporters can also take joy in their use of local and organically grown delicacies.

New Restaurants This French bistro only opened in September 2008, but has become an instant classic in downtown LA. The menu is concise but runs the gamut from simple rustic dishes like the Braised Beef to more elevated fare like the Terrine de Foie Gras, which is creatively served with a port wine gelee and brioche. Customers often rave about the housemade charcuterie as well. The dining room borders on industrial, with exposed piping in the ceiling and brick walls, but the soft lighting, close tables and warm service make it a cozy scene. For the real Paris experience, diners can also eat outside on the quaint brick patio.

New Restaurants CUT restaurant, the newest addition to the Beverly Wilshire Four Seasons, has created a sense of chic within the hotel’s former classically modeled dining room. Designed by architect Richard Meier, designer of the famous Getty Center, CUT is large, lustrous, and smooth, with oak floors, black-and-white trimmings, and curling vines budding alongside the walls of the two-level fortress. The open kitchen invites guests to connect with renowned chef Wolfgang Puck, who has inspired a Nuevo-steakhouse menu. The menu offers USDA Prime, Kobe style beef, and true Japanese 100% Wagyu beef from Kagoshima, all of which are complemented by an assortment of tangy sauces, different vegetables, and a smart wine list. The elegance of CUT is sure to impress.

New Restaurants Blue Velvet, a new addition to the Los Angeles culinary scene, is surprisingly refreshing. Nested in a newly constructed sustainable apartment complex called the Flat, the restaurant dishes up exquisite cuisine— with a conscious. A rooftop garden provides herbs, fruit, and vegetables for the kitchen, and the kitchen deftly pays homage to this fresh produce. Chef Kris Morningstar offers a mouthwatering array of contemporary dishes such as a Duo of Pork featuring crispy belly and braised shank with pork broth, udon noodles, and rapini; and “Crispy Skin of Loup de Mer” featuring clams, chickpeas, merguez sausage, lobster and pepper sauce, with saffron aioli. Design firm Tag Front puts the icing on the cake with a sleek and stylish poolside setting.
